Slaughterings of sheep and lambs (as well as cattle and calves) fell in 2001, reflecting declining stock numbers due to drought.

Recently, farmers have begun to process sheep for the live export market to Saudi Arabia. This is a relatively small and seasonal process compared to sheep slaughtering in Tasmania.
